設定ファイルを直接変更する方法は
user.js に例えば

のように書き込む。最初の５行はコメントなので書かなくてもいいけど。
６行目で項目の順番を 1〜3 のどれにするか決め、７行目以下で項目の表示方法を決める。
が、見てわかるように送信元と日付しか設定できず、サブジェクトや送信元メールアドレスが表示できない。結局不満。
結局拡張機能を使う。
Thunderbird Reset Quote Header
自分はうまくインストールできなかったんですが、どうやら Thunderbird を再インストールするとうまくいくみたいです。まだやってないけど。
